WILTON – A resident is putting her extensive baking experience to use in downtown Wilton, opening up her own cafe and bakery on Main Street.

Carla Ray Fitch has 15 years as a bakery manager at the Farmington Hannaford market, spending her evenings teaching cake decorating classes with the local adult education program. Recently, Fitch leased and renovated the cafe at 285 Main Street, across from Key Bank. Ray Ray’s Cafe & Sweet Treats opened last Monday, serving breakfast, lunch and tasty homemade treats in between.

“This has been my dream for a long time,” Fitch said.

Lunches include soups and sandwiches, served on four kinds of homemade bread, and Fitch will making cakes for every occasion. Ray Ray’s will also be serving gluten-free and diabetic-friendly food. The restaurant opens at 5 a.m., serving breakfast until 2 p.m. Lunch is served from 11 a.m. until 2 p.m., with the cake shop open all day, until 5 p.m. Ray Ray’s Cafe & Sweet Treats will be open seven days a week.

The cafe can be reached at 645-9000 or through Facebook.

  6. So glad to have wonderful new neighbors! We have tried (and loved) many of their offerings. This is a great place to have a quality, inexpensive, breakfast or lunch! Looking forward to the day when your tables are full when we open our doors in the morning!

  9. I was hoping when I saw the headline, that there would be gluten-free options! We will be visiting! Very exciting!

  10. I will also make a point to support the bakery as you have realized that many, like me, are seeking gluten free alternatives; we still have a sweet tooth! I make it a practice to continually ask wherever I go about gluten free alternatives; Panera, Dunkin Donuts, Subway, and at local establishments. The big guys don’t seem to see the opportunity nor the need but locally the Homestead Bakery, the Snack Shack, Calzolaio’s, and now Ray Ray’s get it. Thank you and congratulations!
